Tuna salad is an absolute favorite of our household and mixes wonderfully into tuna melts for lunchtime: generous scoops of tuna atop thick slices of homemade bread, with mild, creamy Muenster cheese melted over the top.
Ingredients
ounces canned tuna,(2 cans)
cup red onion,finely diced
lemon juice
tsp red wine vinegar
tsp Dijon mustard
tsp salt,(more as needed)
tsp black pepper,freshly ground
cup celery,finely diced (optional)
pinch cayenne pepper
tbsp mayonnaise
1.Remove tuna from the can(s) and drain well in a screen sieve.
2.Put the tuna in a medium bowl and flake it, not too finely, with a fork.
3.Toss in the onion, lemon juice, vinegar, mustard, salt, black pepper, celery, and cayenne.
4.Let it marinate for 10 minutes.
5.Mix in the mayonnaise.
6.Taste for salt and acidity, adding more salt and another squeeze of lemon, if necessary.
